The rice ratios that actually work

The "universal" 2:1 water-to-rice ratio is wrong for most rice. It works only for long-grain American white rice, and even then produces rice that's softer than most cuisines want. The correct ratios:

  • Long-grain white rice (basmati, jasmine): 1.5 cups water per 1 cup rice
  • American long-grain white (Uncle Ben's, Mahatma): 1.75 cups water per 1 cup rice
  • Medium-grain white (Calrose, sushi): 1.25 cups water per 1 cup rice (after proper rinse)
  • Short-grain (arborio, bomba, sushi): variable by cooking method โ€” 1.25:1 for plain, 4:1 total liquid added gradually for risotto
  • Brown rice (long-grain): 2.25 cups water per 1 cup rice, 45 min cook
  • Brown rice (short-grain): 2 cups water per 1 cup rice, 45 min cook
  • Wild rice: 3 cups water per 1 cup rice, 45-55 min cook; drain excess
  • Black (forbidden) rice: 1.75 cups water per 1 cup rice, 30-35 min
  • Red rice (Himalayan, Bhutanese): 2 cups water per 1 cup rice, 35-40 min

These are for stovetop absorption method with a tight lid and proper rest. Rice cookers adjust internally for the rice type; follow the cooker's rice guide for best results.

Why rinsing matters (and when to skip it)

Rinsing rice removes surface starch that causes clumping. Basmati, jasmine, and Indian/Thai rices require thorough rinsing (3-5 water changes until the water runs clear) for properly separate grains. Sushi rice needs rinsing to remove excess starch โ€” about 4-5 washes โ€” then soaking for 30 min before cooking.

Italian risotto rice (arborio, carnaroli) should NOT be rinsed โ€” the surface starch is what creates the creamy risotto texture. Paella rice (bomba, calasparra) similarly is cooked without rinsing.

American long-grain like Uncle Ben's is pre-washed and enriched; rinsing removes added vitamins. Skip the rinse for enriched rices unless the bag says otherwise.

The stovetop method, step by step

  1. Rinse rice (if applicable) in a fine mesh strainer until water runs clear, about 30-60 seconds.
  2. Add rice and measured water to a heavy-bottom pot (3-quart minimum for 2 cups dry rice). Add 1/2 tsp salt per cup of rice.
  3. Bring to a full boil over high heat. Don't stir.
  4. Reduce to lowest heat, cover tightly. Set timer: 18 min for white long-grain, 20 min for jasmine/basmati, 45 min for brown.
  5. Do not lift the lid. The steam is doing the work.
  6. After the timer, remove from heat. Leave covered for 10 more minutes (this "rest" redistributes moisture and prevents the bottom from being soggy while the top is dry).
  7. Fluff with a fork. Do not stir with a spoon (breaks grains).

Common failure modes

  • Mushy rice: too much water, or lid lifted too often. Fix: use correct ratio for your rice type, keep lid down.
  • Hard/crunchy center: not enough water, or heat too low. Fix: next time add 1/4 cup more water; increase heat to medium-low not minimum.
  • Stuck/burnt bottom: heat too high or pot too thin. Fix: use heavy-bottom pot, lowest heat possible. A little crust (socarrat/tahdig) is prized in Persian and Spanish cooking โ€” lean into it.
  • Clumpy rice: didn't rinse basmati/jasmine. Fix: rinse next time. Current batch can be saved by spreading on a sheet pan and fluffing hot.
  • Off flavors: old rice (more than 2 years). Fresh rice has bright aroma; stale rice is flat.

Instant Pot / pressure cooker rice

  • White long-grain: 1:1 rice to water, 3 min high pressure, 10 min natural release
  • Jasmine/basmati: 1:1 rice to water, 4 min high pressure, 10 min natural release
  • Brown rice: 1:1.25 rice to water, 22 min high pressure, 10 min natural release
  • Wild rice: 1:2.5 rice to water, 28 min high pressure, 10 min natural release

Pressure cooking uses less water because no evaporation happens. The 1:1 ratio shocks people but produces perfectly cooked rice in a third of the time.

Scaling rice for a crowd

1 cup of dry rice yields 3 cups cooked (long-grain) or 2.5 cups (short-grain). Serving size:

  • Side dish: 1/2 cup cooked per person
  • Main dish (stir-fry, curry): 1 cup cooked per person
  • Rice bowl (poke, burrito): 1 to 1.5 cups cooked per person

For 8 people having rice as a main (curry night): 8 ร— 1 cup = 8 cups cooked. That requires 8/3 = 2.67 cups dry rice + 4 cups water (at 1.5:1 ratio for jasmine).

Cost per serving

Basmati rice bulk: 20-lb bag at Costco for $24 = $1.20/lb = about $0.12 per cup dry = $0.04 per cup cooked. A 1-cup cooked serving costs 4 cents. For a family of 4 eating rice 3x/week (12 servings), rice alone costs $0.48/week โ€” or $25/year. One of the cheapest foundations in the world.

Reheating rice safely

Cooked rice can harbor Bacillus cereus if left at room temperature. Cool rice to fridge temp within 1 hour of cooking. Reheat thoroughly to steaming (165ยฐF+) before eating. Microwave method: 1 cup cooked rice + 1 tbsp water in a covered dish, 90 sec. Rice-cooker reheat: add 2 tbsp water, close lid, set to "warm" for 10 min.

Stir-fried rice should start with day-old refrigerated rice โ€” the moisture loss gives separate grains instead of a sticky mess.

  • Japanese short-grain (koshihikari): rinse 5 times, soak 30 min, cook 1:1.1 ratio
  • Persian rice (tahdig): par-boil rice 7 min, drain, layer in buttered pot, steam 40 min โ€” creates crispy bottom

FAQ

Is brown rice healthier than white? Brown has more fiber (3.5g vs 0.6g per cup cooked), more magnesium, and slightly more protein. White rice is faster-cooking and easier to digest. Both have similar calorie counts (~205-215 per cooked cup). Choose based on preference and dietary needs.

Why does restaurant rice taste better? Three reasons: they use fresh rice (high turnover), cook it in stock not water, and finish with butter or oil. Replicating at home: use chicken stock for half the water, and stir in 1 tbsp butter per cup dry rice after cooking.
